If I want to remove myself from the member list of a forum, can I do it or does it have to be done by the site admin?

Site Admin or mods can make you inactive, delete you and/or ban you. You wont have those options in your profile panel.

depends on the forum software. phpbb clones such as this allow you to hide your online status but not your membership.

I want to stop receiving PMs from these fora.

Why not change the email address for that forum to one you don't use?

To stop getting PM's or junk emails?
PM's turn off the notifications and popups in your profile or the site admin/mods can disable you PM function.
emails... you may need to change email addresses once you start getting spam. My recommendation is to have your email addy hidden if only for this reason. There do seem to be automated programs that check phpBB software like this for email addresses to spam to. They even automatically generate unconfirmed memberships with dodgy www links etc.
If you do change your email address, get the site admin or moderator to do it, and they can just blank it out. If you do it, it may lock you out until you reconfirm who you are with an email sent to the new false address.
