My main point would be to carefully consider the isolation of living outside an urban area. The lack of street lights, quietness etc are fantastic, but remember that you will probably have to travel to town daily for work, food, schooling etc, which can really eat into your available time (and cash).
A model that I have found works is to live in a regional town (or city) for the daily convenience, but have some land out of town for weekender duties. That way you can have the town convenience daily and also have your rural pursuits. Accomodation at "the weekender" does not have to be flash as you only might stay 1-2 nights per weekend, and if it has no TV etc, all the better for the experience!! If the property is close enough to town (say within 1/2 hour), you can get out midweek to check calving etc when required.
