    Question Salt cured Olives ???

    The first of our olives done in brine are ready to eat (YUM ) .Over a light lunch of olives,cheese and a little red we were thinking of doingthe next batch in dry salt.
    Has any one seen or heard of this method before.

    The better half worked on a biodynamic farm with a big olive orchard.She has mentioned the salt cured olives before.
    She is up in Perth for a couple of days,will ask when she is back.
    I love olives.Got 15 Kalamatas,will get our first harvest this year,getting close to picking.Not many but enough for a few jar fulls of pickled olives and chillis!!!

    Olives reminds me of a prank we played on a not so clever workmate last year.
    There is a huge old olive tree in the depot,only has tiny olives on it.Me and a mate were looking at them as they were nice and black and ready to pick.We tricked the not so clever one to try one,telling him we had eaten a few real nice ones.He told us he loves olives and put one in his gob,he chewed it spat it out and was doing handstands.MATE YOU MUST HAVE GOT A BAD ONE we told him!!!! YEP he grabed another
    We both burst out laughing,the poor bloke was not impressed at all.

    Thats a cracker Andy, poor bugger never new what hit him. My spanish neighbour bites them raw to workout what tree to harvest next. Got 12 trees here all about 40 years old, great producers,filled a plastic 44 drum with pidgon egg size fruit.Leached them in water for 3 weeks, then divided and resoaked in brine,garlic,herbs ect.
    Had a tube set up that put a neat slice in the skin of every olive,alows the bitternes to be leached out quicker.
    Great snack food and like you have said before when its home done its all good.

    Will show the Mrs the post and get her to Reply as its her expertise.
    They did both the brine and salt.
    Intend making my own press to do homemade olive oil too
    Stainless pipe drilled and a jack should work.

    Hows this for dinner.
    Vine yard rabbit pieces, home made pasta,wok fried oinion,garlic,hand full of chopped salami and hand full of de piped sliced olives.
    Stir wok cooked stuff through pasta, add alitle olive oil,small grate of romano cheese. Serve with rabbit YUM.

    Shoot a rabbit in a vineyard,hang it for a day or two,debone the carcass and cook .
