IMHO probably the 2000-2001 and then the 2003+ facelifted ones.
I just say thing because the 99's were the first batch, the late 2001-2002 didnt have the CDL nut on the transfer and the 2003+ had everything and were probably the best of the bunch - these are also flash upgradable.
I wouldn't have thought an early ZF onto the TD5 Deefa would be complex - that said, I've never done it.
I feel dirty considering a TD5 D2 but I dont really want to be driving a Toyota again, I loved it but it did have it's badpoints and they were many in comparison.
A 2003+ D2 looks to be anywhere between $24,000 and $35,000 ish so it will probably be another year or so before we could consider one by the looks of it. as I would want to be able to afford the extras (Bull Bar, cargo barrier and the other stuff which I wont be able to transfer over.
I thought the Toy auto pulled and drove nice, it tended to hold the higher ratio's longer and didnt like windy stuff all that much, but plenty of go.

There's no reason why you cant work on any of them yourself. An engine is still an engine, a gearbox is still a gearbox and a diff is still a diff, they still have a fuel pump in the fuel tank and a starter motor on the side. When I serviced my Disco yesterday..... well, the only thing that I did differently to any other car that I've owned was to change the oil filtering centrifuge also - and thats a good thing. They really are not a complex vehicle and like the 3.5 V8, 3.9V8, 4.0V8 and 4.6V8 the TD5 has a little black box (actually its silver) beside it that plugs into the motor and tells it when to squirt fuel (and a few other things). Nobody bats an eyelid about the electronics in the V8, but freak about the TD5's thinking its all going to melt down as soon as you hit dirt. This is just my opinion to clarify, not at all to deter you from buying a 300Tdi (BTW, I'd get a 98 as it was the newest).
