I considered that version, but realised that it was possible to interpret the caption so that "revolt" was a verb. In that case, no apostrophe was needed to indicate possession.
Since there was more than one peasant/pedant in the image and I believe I am not the only pedant on the forum, the apostrophe would most definitely have been after the "s".
However, in the end I decided that since it was possible to interpret the caption so that no apostrophe was needed, it was better to stick with the version that was in the original post.
All things considered, I believe that "The Pedants Revolt" is the best option, "The Pedants' Revolt" is a less satisfactory version and "The Pedant's Revolt" is incorrect.
