Driving home tonight, 110Km/h, aircon on, rather warm outside. Aircon goes warm and temp gauge goes shooting up towards the red. Pull over let it cool a bit and continue driving, not letting it get over 2k revs, heater on, and gauge stays middle-ish, jiggled a bit in the first Km or so, then settled.
Well, halfway up the hill I got bored with that and gave it a few more revs, then turned the heater off, then turned the aircon back on.
And gauge is bang on in the middle, doesn't move again?
Any ideas?
Radiator replaced a year ago. Thermostat tested fine a year ago. Timing belt done a year ago and waterpump not replaced cause it looked fine - according to mechanic.
Radiator hose sucked itself flat maybe?

Air lock in heater circuit, air now gone, check coolant level.
In my parents Subaru, it commonly did what sounds to be a very similar thing - usually uphill, freeway speeds, always in 5th gear, the temp gauge starts to climb north unexpectedly. We found if you drop a gear and the engine isn't working as hard it drops immediately.
It went through a phase of doing it for a few months. Then a rock went through the radiator and it got replaced and it hasn't ever done it again since the new radiator.
Might be worth giving the whole cooling system a good service just to make sure its all working as best as possible.

Send a PM to BigJohn,he worked on them for a while. Pat
I don't think it has anything to do with the cooling system as such.
I've noticed a lot of Subarus that have had a simple modification that judging by the popularity of its implementation suggests that it is an effective solution. It moves the heat from the front to the rear:

Maybe the temperature sender itself is faulty?
Our Forester did this for a while back in 2004.
As all the coolant became hot the guage climbed, knock it back a cog or 2 and give it some berries it would come back. I could actually make it climb or fall with the accelorator.
It will be the thermostat sticking partially open creating a restriction. You won't notice it on short trips or around town, but you will on the highway.
We had it all replaced under warranty and hasn't done it since.
It was a bugger to trace, as one day it would do it then the next day not.
