Taff i havent cooked a full xmas dinner since i have been in Australia although this year i have copped the xmas shift at work :(

Well this year we will probably have:
Ceviche (made with Ean's med endeavour prawns, as well as local fish and cuttlefish)
Roast Goose and Duck (tastes better when it is home grown) stuffed with spicy couscous
BBQ prawn skewers (Made with Ean's large tiger prawns)
Whole fish baked in rock salt.
Maybe some lamb as well...
And of course salad, fruit and something to wash it down ;) - either the new batch of homebrew chilli beer that goes to 11 :D, or a nice maggie or barossa red from the cellar.
I will never forget Jennifer Patterson saying something like "even the best, organic, free range turkey is still bland and tasteless" :wasntme:
I prefer the poultry with dark meat and FLAVOUR!
Mangoes, Prawns, Bugs and a Crab each :)
With my grandfather a prawner and uncle a mango farmer chrismas is a culinary delight

Turkey has been optional for my family for some years. Mum doesn't like it much. We've had to put up with duck with veal stuffing in past years.
My favourite Christmas food is duck, baked ham, prawns and oysters, Christmas pudding with brandy sauce, mince pies (all home made of course). All has to be washed down with sparkling shiraz and Tasmanian sparkling.
It's the big eating day of the year for us. I need a siesta just thinking about it.
Prawns, beer, prawns, prawns, scotch, prawns.
Then bed.
