We look like we might be leaving the desert and heading for country NSW (far south coast). Would someone be able to help by letting me know what the rego is for a 97 Defender and all the slips as well?

Whereabouts on the South coast, if the vehicle is still registered in another State and you intend living in NSW you have a few months to changeover. Go to your local (NSW) rego office, hand in your plates, present a Pink Slip and transfer rego to NSW. RTA will return your plates to whatever State you came from and you will (eventually) recieve a pro-rata refund for unused rego, Regards Frank.
if the vehicle is from another state......it will need a blue slip to get nsw rego.....
they will check engine and chassis numbers........if the car looks in poor shape.....they will go over the whole vehicle......
as tank said......if you cancel the rego from where you are now......you will get the balance refunded......
but dont cancel that till you get the nsw rego sorted first......or you may end up driving unregistered......
ring and speak to the rta and they will answer any questions you may have.....
