Going through this conundrum for a Defender 90 in NSW

I'm about to go through this conundrum for a Defender 90 in NSW. There now at least on the surface appear to be consistent national laws according to this site: https://www.childcarseats.com.au/legal-requirements
One of the NSW Government sites I read indicated that if the seat has a restraint strap on the back then you must fit it to an anchor point. I'm on the borderline of convertible booster which they've been in from 6 months and is rated up to 7 years and allowable booster age (4 years). The kids are nearly 4 and are big for their age (almost as tall as my 6 year old niece).
All this talk of engineered anchors seems relatively crazy to me given what sort of seats you can buy and the fact that they all really use the vehicle's standard seat belt as their main anchor ... its OK to have a light seat (2kg) with no additional fixing point and a heavy kid but its not ok to have a slightly heavier seat (6kg) and much lighter kid. When I studied physics, i'm sure there was something about Mass and Velocity.
However, I guess we have to comply with the law and I pick up the new Landie in a week or so and as such have to resolve my conundrum one way or the other.
I'm looking at the following product as a booster seat ... anyone have any experience with it? Safe N Sound Tourer Booster Seat
