Thought I should post a conclusion to this thread, to say thanks as well.
On the weekend the better half and I left home at 2am to drive 7 hours to Lismore, where we picked up a new Coromal Element 626 (6.26 metres).
Couldn't rate the dealership highly enough and they were well worth the drive up there, price was good too of course. :)
Ended up not needing a modified hitch, standard height van really. Bought an ARK tongue from BCF from another forum members recommendation. Doesn't meet LR specs, is only out by 8mm.
Didn't wire up the car yet for 12 pin plug, didn't get time! So just bought a 7 round to 7 flat adaptor and swapped the 7 flat for a 12 flat which got us home.
I really struggled to remember the van was on the back of the Disco. It's not the heaviest van, ATM of around 2300kg, and would have been no where near that when we drove home. But blimey it tows effortlessly.
Trip up there was around 9.5L/100km and trip back was 14.4L/100km, which I was happy with.
Stuck it in cruise most of the way and the trip was overall really easy. Thanks for all your help up to this point!

These ones are considered 'budget' from Coromal. We bought this as it has bunks and shower/toilet combo. Suited us perfectly. Don't have any interior shots yet mate but the coromal website can help you there.
This is the Element range (which is their middle range van apparently).
This one was 46k brand new on road. We then bought a telly and a cover etc which was another 1k.
Pretty reasonable pricing I thought.
