What I have found so far is:
1. Remove the lower centre console as per YouTube videos
2. Remove four torx screws holding the Terrain Response/suspension height/Hi/Low range control panel in place.
3. Remove four torx screws holding the side padding trim on the EPB switch side only.
4. Slightly push out the shifter panel by releasing the two tabs.
5. You should now be able to jiggle out the tray infant of the EPB switch as it's soft and flexible.

6. Now you can remove the EPB securing screw.
7. There's a tab holding the EPB switch in place. But despite lifting this with a screw driver, I still cannot push the switch out - there's only room to push it towards the front of the car. I cannot see anything else holding it in place though - I don't know what I am missing here!?!

EDIT: got it. You've got to push the front (where the screw hole is) up while sliding it forward as it sits in a slight recess.
