I'm not too fussed on having 20 litres, let alone 40, 50, or 80 litres of water sitting internally just waiting for Murphy to show up. I also have the issue of drawers in the rear.
Ae we fish a bit, I also want something I can access without touching too much.

I think a simple fabricated frame and a suitably sized Caravan tank should see you sorted.
Not sure how you’ll go if not baffled so seek a baffled design. I think you could even get a couple of Jerry Cans under there if you wished..
What about a frame designed around the spare wheel winch? Space in the middle would require tanks (or jerrys) to be either side or custom fabricated donut shape. Probably too complicated compared to just bolting to chassis. I’ve never come across water storage in that space.

I had the same idea with the spare wheel area being vacant after I installed my rear bar and wheel carrier and this is what I designed.
I got a 50lt polytank made up to fit the area under the car where the spare wheel was. Got it made up by a fellow in Queensland who also made a water tank for my earlier RR Classic. cost approx $330 delivered to Sydney.
I also got a locally made aluminium bash plate / cradle which uses the existing wheel locking chain plus made mounts to bolt to the chassis. approx $180. I run the filling / breather and outlet via electric pump into the back of the car via the wheel arc, where I mounted to the side of my drop down fridge slide. works really well, please see photos attached.
