Tyres
Goodyear make the Goodyear MTR in a 255/55/19 for Land Rovers.
Check out
Goodyear-4x4 Tire
Not sure if or where you could get these in Australia but you could try your local Goodyear dealer.

I've had 5 19" MTRs for the past 2 years and they work better in both sand and on hard rock than any low profile tyre ought to (last one was >$650
, so for that price they ought to be somthing special). They do need a bit of thought for tyre pressures to get float on sand, but also to make sure the tread doesn't impact and crack the rims.
It looks to me that the Dolium spare tyre carrier is designed to just give the 45 degree field-of-view to the brake/tail light and the licence plate, so there's no need for a separate stop/drive light and/or licence plate bracket. The inevitable compromise is that it would prevent 2 tyres on the back.
