Is it actually the temperature sender that's faulty and the engine temperature is OK ? My C240 conversion had a std. Land Rover sender which was reading low, changed for a new one and all OK now.
The voltage stabiliser (behind the instrument panel) could also cause problems with the temperature reading if it's playing up.
It could be the head gasket, are there any other symptoms such as oil in the coolant or coolant in the oil. Check for availability of head gaskets, should be OK as the motor was used in forklifts for a number of years and I've seen gaskets on Ebay.
