It's easy to fix the adjustment issue.
Remove the drum brakes and fit disks!

I am really glad that someone raised this one for discussion.
This is likely to be my next modification (assuming that WA DoT don't divert my email address straight to spam once my current seating fiasco is resolved(!)).
Firstly, I would be really intersted if someone could post a link to a supplier of the 'Cookie' system posted below. I have never seen this one advertised and a Google search for it doesn't help me much.

Any experiences or thoughts about any of these? Or other alternatives currently on the market.
Please don't quote me without further research, but as I understand it, the distinct advantage of the Heystee kit over the Zeus is that the Heystee uses off the shelf discs and calipers (but not land rover??) whereas the Zeus kit uses bespoke discs which you need to get machined (from them). It would obviously be an advantage in my eyes to go for a kit which uses off the shelf replacement discs and pads from commonly available models.
Any others out there which use purely off the shelf defender parts - caliper, pads, disc, bearings (other than the mounting brackets themselves)?
I have a couple of Disco 1 axles lying around, one brand new, one brand new refurb with a LSD in each diff. Intend to put these onto my truck using the YRM brackets once I shred a diff or snap a half shaft on the orignal axles. Mutiple benefits including diff ratio, strength, half shafts, CV joints, disc brakes, track increase and ability to use new pattern wheel rims. And I will make the man from the DoT blow a fuse.

Cookey (Gary Cooke) is a Sydney Based member of this forum http://www.aulro.com/afvb/members/cookey.html he is an Army trained automotive mechanic/recovery mechanic who for many tears owned and ran an automotive workshop specialiing in spring over suspension modifications to all manner of 4WD. He designed and built the Suzuki Flx11e with double articulating shock mounts and other modifications.
