If it is a trayback then that's about it - tie it to your backboard.
The "tub" backs had some alternative mounting(s) and cut-outs in the rear for one or two spares
I have a S3 ute, the spare wheel currently just sits in the ute tray. How is the spare wheel supposed to be stored, clearly I am missing some sort of fitting ?.

What about the bonnet ??
The bonnet is always good on a Series LR, but you need the whole kit (base, bolts and cleats (have to call them something). I have seen stacks on discarded bonnets.
Insofar as you have a tub back, you may have to look up some older pics and parts diagrams to see the mountings that I referred to. I guess you have to just look around at swap meets to get some (assuming you haven't got any).

Here is a photo of the wheel in the tub recess. I made the recess wider to fit a 235/85R16 tyre by cutting out the centre part and riveting in a wider base panel. The hole in the tub had to be widened to fit the wider recess also.
