    BBQing Trout?

    Hi all, was just wondering which herbs work best with trout cooked on the BBQ wrapped in foil. Matt

    G'day Ace, I think the best way to BBQ trout is this,

    a) lay out your foil and lay lemon slices on it.
    [img]style_emoticons/<#EMO_DIR#>/cool.gif[/img] lay you trout on the lemonslices then make a kind of bowl out of the foil
    c) add some white wine,a little garlic and some choped parsley.
    d) close the top of the foil to seal in the juices and stem the fish
    e) place on bbq for approx 15 mins (this may vary depending on the size of your fish)
    f) unwrap your little package and
    finally, throw away the trout and eat the foil, it tastes better [img]style_emoticons/<#EMO_DIR#>/laugh.gif[/img] [img]style_emoticons/<#EMO_DIR#>/laugh.gif[/img] [img]style_emoticons/<#EMO_DIR#>/laugh.gif[/img] [img]style_emoticons/<#EMO_DIR#>/laugh.gif[/img] [img]style_emoticons/<#EMO_DIR#>/laugh.gif[/img]
    No seriously, I don't like trout and don't know if it'll cook nicely like that, but it works a treat with barra or snapper :wink:
    The only change I would recomend would be to give it a bit of a Thai flavour, replace the lemon with lime add some chilli and replace the parsley with some coriander [img]style_emoticons/<#EMO_DIR#>/biggrin.gif[/img]

    Thanks Sean, i will give it a go. I wont try the thai method, Stacey doesnt like spices and chilli.

    All that Sean says.

    A trick with trout is to soak it in milk for four hours or sprinkle it with brown sugar. This removes the earthy taste. Works very well with the much maligned esturine mullet as well.

    Sheesh..... I reckon I'd be soaking the trout in sump oil to get rid of the flavours added in the last cuppla posts!!!!
    Trout has a DELICATE flavour..... just some butter and a frying pan, or maybe some lemon butter in the foil.... no more than 6 mins a side unless you have a MONSTER on there. If you feel the need for a little spice either look in the special manual you keep next to your bed..... or try black pepper.
    Alternatively... get a smoker..you'll just love that

    Yeah, I'd be saving the garlic for your flake or nile perch.

    slivered almonds, coriander, pinch of nutmeg, lemon, white wine, or apple juice.
