I just watched the latest North American Overland video on YouTube and they're rebuilding a lightweight. It has fuel injection fitted. Does anyone know where it's sourced from? The blokes at NAO aren't particularly forthcoming with information.

Unfortunately, my engineering skills are sadly lacking in that regard. It would be nice if I could just pick one up from a supplier and fit it myself. I know they get their motors from Turner's Engineering but a quick perusal of their site showed nothing similar that I was capable of finding.
You will not get anything off the shelf for a 2.25 engine - just too old - will be home built with some many components collected from other vehicles, some after market stuff and fabrication and modification.

A system of on an EA/EB falcon that uses a simple throttle body injection system would be the simplest to adapt .

It's a Holley Sniper EFI system.
You can get the Holley Sniper system in single barrel & apparently they are fitting them to old jeeps so you would think maybe they will fit on a landrover.
