You’ll have DRL of some sort whether you like it or not as it’s a legal requirement. As for the LED upgrade, I can’t comment specifically but they should be a lot better than HID/halogen.
Just ordered Defender S with only a few extras. I am confused with the headlight options. There is the option of Premium Leds with DRL at $780. When clicking on that option on "build your own" they do look different. My salesman does not know whether these are the same headlights as the standard ones. He is looking into it.
I am really not interested in having the DRL but want to know if these Premium Headlights are more powerful.

The S model comes with LEDs so I recon they are charging $780 for the DRL round the headlight😂!

Either or both the later model RR and RRS can have standard LED headlights or more expensive ones that switch off smaller sections to prevent glare to oncoming traffic (Pixel LEDS perhaps?). However IIRC the more expensive lights are considerably more expensive, not just $800 extra.

All headlight options on the Defender are LEDs. I have it confirmed that the Premium with DRL option has more LEDs so whether that gives a stronger beam who knows. I have decided to update my order to include the Premium ones and adding fog lights so I can drive around with my foglights on all the time like a lot of drivers here in Victoria do even when it is not foggy!... And then switch them off when it is foggy
I have experience of the Pixel Leds, they are really good but can do without them.
