Probably the same reason most other brand of cars use chrome pistons, cost, and due to the fact they do normally have a long service life. I have spent a few years working as a brake specialist in the early eighties. Although a percentage do rust, more often than not when replacing pads, the calliper pistons are still serviceable.
Having said this, I did not know that stainless was available, and yes a great idea.
