I understand that the smaller the turbo the faster it spools up, this at the expense of top end where it might not be able to provide the amount of air required at higher revs. Given that diesels don't rev much above 4000 RPM at what stage is a turbo for a 2.5 lt too small? I see there are GT1749V, GT2052V, GT2256V and then GT2559V etc. Is there a sweet spot in amopngst these for a 300Tdi?

It's too small when it can't provide the boost required at the rpm for maximum power.
It's too big when it either can't deliver the required boost down low or it surges badly when trying to deliver the required boost down low.

You need to delve through the compressor maps and half a thermodynamics book to check this out.

If you have a lot of money to spend on a turbo, check out the Borg Warner EFR series. They have an interactive web sizing tool which can predict everything, including turbine pressure.
