Don't know why you would need a new fire wall
Any way my 90 was a hard top when I bought it and I do have a roof for it in my garage if I ever want to turn it into a hard top. And my 90 is a 1985 and it does not have the hinges on the windscreen and does not matter if you have ever driven a car with the windscreen down it is not pleasant at speed.
There are just very few bolts holding the roof on and a lot of silicon.
First just look there is 4 long bolts in each corner in the back and behind the driver . One each corner each side of the rear door , and one each side beside / behind the driver and passenger. Then there is a row of bolts on the top of the windscreen. These is what holds the roof to the screen. Once you have taken off the back door and undone these the roof( with the help of a knife to cut the silicon) will lift off . Not too heavy I have lifted one but myself but need two of you to move it off. There is no difference between the new defenders and the old ones just a lot of plastic capping over the top to make them look pretty. Land Rover are lazy and will not change anything unless they really have to.

They have everything you need , the bar for the top of the screen , all the bars and bit across the top of the doors ,even the military style protection bar. But this is more important for the seat belt mount rather than for protection if you roll.
As for ADR it never got mentioned when I bought mine into Australia and it was checked and checked again by all sort of organisations.
I have a few mates in the uk that have done it to a few pumas so your not the first
