Friend aulrovians countrymen lend me your ears!
So I'l set the scene... My wife is on the highway 100kph, then she hears something like a truck using compression braking but no truck in sight. She notices speed dropping, so tries to acceleratebut the car "didn't like it". She manages to pull into a side road with white smoke (steam probably) pouring out from under the hood.
Inspection under the bonnet reveals one of the coolant pipes has split completely.
I am currently expecting to have to replace the head, would that be an accurate assumption?

Expect the worst but hope for the best.
Replace the offending part, fill her up with water and start her up (no pressure cap on) and hope for the best.
Don't call her bonnet a hood again though, you know how fussy these pomms can be, especially if mis identified as a yank.She might crack a woobly and spurt water around.

Surely with loss of coolant at 100kph it would have overheated and the head gasket will be stuffed?
ALL 300 TDi's should have
engine monitor needs to be fitted

Should be all tdi200/300 over 300k need the monitor. In hindsight the early signs should be overflow tank split or a little higher heat on the gauge get the bloody thing checked.I wonder if this would be a problem on a non-turbo engine with the lower egt's???
Nothing to do with having a turbo, but everything to do with aluminium head and cast iron block in my opinion.
Blow a hose on a 80's/90's Falcon and you've got exactly the same result. Same deal with the old Nissan Bluebird I had 20 years ago.
Run out of water on an old 60's vehicle with cast iron head and you pull over, let it cool down a bit while you find some water to put in (creek, roadside puddle etc), in with the water and away you drive.
Also, the youngest production 300tdi's are nearly 15 years old now, so if they still have the original coolant hoses......

Replace hose, fill her up and see what happens as it is going to depend on how long she ran it without coolant.
The 300TDi is a pretty strong engine so just hope that she didn't run it for too long.
