i am failing to see your issue hamish, the guys have illustrated why your cooling system does not sound right but you have jumped on them for that info.
suggest run more checks and report back with findings so that we all can be better educated.

I have a TD5 Disco, 356700 km's on the clock, two owners before me, the man I bought it off assured me it had never overheated, before him it was an engineers car for the Illawarra council. Another question that hamish should ask instead of being agro at people trying to help, is what's the oil ideal operating temp. If the radiator/ thermostat combo is keeping the engine too cool the oil won't get to its ideal temp so it won't lube the motor correctly. You guys know the correct water temp( thanks:D) but what oil temp would that lead to?
It sounds like they tossed the old thermo as they could not find the new one, I did that for a few days in an old v8 Holden as the old radiator was rusted/leaking and it was on gas.
Actually, it wasnt the questions. It was the tone. Anyway, found the answer...dodgy sender unit. Numbers now normal.....with lower peaks, and shallower troughs. Very happy with outcome.
