re isolation switches look at marine applications, BIAS boating, Whitfords etc. There are marine isolation switches for the large diesels. I also saw some for sale on Ebay, but i'd probably default to the tried ad tested products from the above mentioned distributors when you are playing with that many amps.
The Tigerz11 12,000 lbs winch draws 480A + at full draw. You can get a 600A continuous isolator switch.
as for cable, 0 gauge will be more than adequate. Most winches come with 2 gauge. finding a breaker that will cope with the current draw will be the challenge. That said, there is no fuse inline between battery and starter motor, so it isn't strictly necessary and may be a bottleneck if it's not adequately matched and is a source for voltage drop between connections.

FWIW I could not find a suitable breaker when I was looking not long ago. I ended up with a large all metal truck / marine isolator switch that has a proper (and very high) amp rating. Most are complete garbage.
After all this I used my noggin and will switch the small earth lead from the solenoid box no earth no go just want to be able to disable it from ppl up to no good
