sounds to me like something has shorted or gone OC and has fed the brain enough crap for it to goto "naff you all Im going into limp mode till you all start to make sense again" If your trip computer and dash lights are all out I would even go so far as to say that the dashmodule has been/is a part of the cause.
Request a diagnostics output from the cpu and the fault codes as if the dash module is out of whack you may not be getting the idiot lights doing their thing to warn you of a critical failure.
If its just the trip meter and current l/100km settings that are gone thats fairly typical of a full brain reprogram and should indicate that they have done the brain reprogram but if all else is as you say theyve done something wrong in the process and may have forced it into limp mode.

Remember this tho, if they ever have to plug into the ECU as part of servicing, maintenance or warrenty work ask to see the fault code print out and the post servicing print out. if they ask why tell them its for your personal servicing log book so that you have a full history of all faults and work which helps with the resale value of the vehicle.
update:
spoke to my dealer, service dept not open, suggested I call LR assist which is in fact RACQ LOL. Anyway out they came but could not find the fault with the dash lamps, it also affect the lights around gear stick etc.

limp mode, other than the idiot lights coming on on the dash, typically the check engine light and depending on the fault and the configuration of the ecu some others (like m+s on at the same time with the D2 auto)
generically speaking (based on more than one type of ECU as I dont know whats in the D3 or how its been designed to react), if thats not available (cause the dash module is unplugged)
you should notice some if not all of the following; a loss in preformance of the engine, more emissions, knocks and rattles under load, loss of max RPM, increase in fuel consumption, rev hold/cruise control wont work and in extreme cases the engine will not restart untill you do a hard powerup of the system (disconnect the battery, turn the ignition on, off, reconnect the battery and restart)
If you have the auto the shift pattern will seem odd shifting when you dont expect it too and they will likely be hasher shifts(as it will not be running a custom shift map thats learnt how you drive), it may not select overdrive and if fitted auxillary coolers will run all the time.(in some situations if the auto brain stops talking to the engine brain BOTH with resort to limp home mode.)
In some extreme circumstances other auxillary modules that talk to the primary ECU (being the one that runs the engine) may not function so their subsytems wont work correctly. most commonly this would be the ABS/TC module ABS will still work but the TC will go on holidays.
