I run both my 33" MTRs and my 33" Bighorns at 46psi on-road - and as low as 8 psi offroad.
I tried lower pressures with both when I first got them but they felt wallowy (both have fairly supple sidewalls).
I'm running 225/85R16 BFG AT's at 40psi, it still chews the corners faster than the centre.
They've done 70,000km, lowest one will probably do another 10,000km. Best one will probably do another 30,000km.
I run higher pressures when touring on highways, depending on vehicle and tyres i.e. different treads, sidewalls etc., generally 6-8psi over man. recom. BUT your problem of going off line from the rear on moderate bumps (geez what happens on big ones??) indicates rear shockies have had their day, not pushing the wheel back on the road, maybe springs as well.
