Hi Chris,
When you removed the thermostat, did you remove the whole thing or did you cut the guts out of it and replace the orifice ring?
The cooling system is designed to work with the coolant flow rate through the radiator set by the thermostat apperture.
If the whole thermostat is removed the flow rate is too high and the coolant doesn't have enought dwell time in the radiator to cool off enough.
Thermostats are there to regulate the flow of coolant from the cylinder head to the radiator to maintain the optimum engine operating temperature.
