The small little camping jobs they are hyping all over the net are pretty much useless. Better off with a good 12 volt fan or a DC inverter 240 volt fan if you have that capacity in your camping kit as they are very efficient compared with AC brushless motors used in cheap pedestal fans. I use one of these in my Van and I can run it all night and the batteries hardly notice.

An evap cooler wouldn't be much good in the high humidity of NT.
Have you thought about the 12v air cond units like they have in trucks?

I had one in the last truck that ran off the main batteries and never ran them flat, so if you have a decent second battery setup you should be able to run one.

I am not sure what type you are speaking of ,the trucks i have driven have an " ice pack " which has a small deisel engine that runs basically a seperate air con unit for the sleeper cab.
any chance you have a brand or a link to the type you are talking about.

The one on the Freightliner is an "Autoclima". The outside unit is about 2.5 feet high and about a foot wide with a fan in the cover with a hose going inside and the inside unit is about 2 feet wide and about a foot high with four directional vents. You will have to check the current draw cos I don't have those details.
The new truck has a 24v dometic unit, don't know if they have a 12v unit or not.

There are other brands out there that look similar to the autoclima that might be as good.
