    Prawns - cooking and recipes

    Thanks to Ean Austral some of us very lucky AULROians will be eating his fine Northern Fisheries prawns this Christmas.

    Now how do you cook them and what are some good recipes?

    I've put them into salty boiling water for 3 mins and then iced salty water before.
    Should you do that from frozen or is it better to thaw them first?

    The only way I know to cook prawns is on the BBQ. Peeled prawns, sweetchilli sauce on the hot plate. Cook until done. Doesn't take long.

    On the barbie, do you thaw them first or cook from frozen?

    When you do thaw them, what is the best method?

    I have been known to throw them on frozen and thawed.

    To thaw I would leave covered in the fridge or on the bench. I have heard something about leaving them in water to thaw, but I am no expert!

    My favorite Creamy garlic prawns

    tbl butter
    4 cloves garlic
    2 spring onions
    5 mushrooms
    250g bacon
    250ml chicken stock
    600ml cream
    500g prawns
    Melt butter in pan add chopped bacon,mushrooms,chopped garlic and chopped white end of spring onions, cook for 5mins, add chicken stock and cream simmer on low until reduced by a third, add prawns cook until pink, add chopped green end of spring onions when ready to serve.
    Throw on top of a t- bone

    Always thaw before cooking.. to thaw fill the sink with cold water and chuck in how ever many prawns you think you will eat, better to have to get more out then have too many and have to refreeze, which is not really recommended.
    To boil Prawns,
    Bring pot with salted water to the boil, then add the prawns, you will see them sink to the bottom of the pot.
    Once they come to the top stir the prawns then keep them in the pot for no more than a couple of minutes more, remove them and put them in some salty iced water..they are basically cooked once they float, you stir them to get the one's underneath to float.
    The SECRET is dont try and cook to many at once..Also let the water reboil before adding the next lot....

    If you boil them XL tigers I will be really annoyed..

    With them. shell them but leave the last section of the tail on, like a prawn cutlet, then slice them down the back long ways from head to tail, but don't cut right thru, you want them to fan out flat.
    Soak them in garlic, chilli or whatever marinade takes your fancy, then sear them on a hot barb plate for a few minutes each side, or till they are cooked thru

    The large tigers prepare the same but instaed of marinade them cover them in egg,flour and breadcrumbs and shallow fry them till golden brown.

    Gday Derek, thought you were saving your for Chrissy lunch.

    I had to stash some away for myself today as I nearly sold them all without keeping some for my Chrissy lunch..

    The outlaws will be real impressed if I did that..Did you see the write-up in the NT news the other day..SWMBO takes a far better pic than me..
