Should be all OK - unless you have played with the oil pump it should still be primed but I would crank it a bit until the oil pressure light goes out before starting just to be sure.
Also when you have ignition on and fuel pump running make sure no fuel is running out the bottom of the carbies as the old o rings can crack when they have dried out.
You are obviously concerned about old fuel so when you have put new fuel into the system run the fuel pump for a while and it will force old fuel in the fuel system (pipes/filters etc) back to the fuel tank and there will be fresh fuel in the system.
