Serge,I regulary drive up an 8% incline so for your defender to drive up a 15% with 1.8T on the back and only have coolant temps around 93 degree's and egt's at 500 I would be very happy with that.I went for a drive to pick up a van with a mate in her troopy a few months back and that POS was running way hot sitting on 60 on flat roads which is what my two troopy's used to do,my Patrols wouldn't get hot but they would switch the A/C off going up a hill in 30 degree heat. 520 post turbo is about as high as you would want to see.

However, you were towing 1.8T Serg.

I suspect that a lot of modern turbo diesels would hit some scary EGTs towing heavy loads up hills. However many modern engines are designed to see higher than 750 pre turbo.
