Would make for the ultimate shooting vehicle!

Yes it is possible, if you have the hinges and as Mark suggests also a soft top. Otherwise you have to lift up the roof by undoing the bolts and screws on the top of the screen, the "B" pillars and the rear corners to get sufficient space for the screen to fold forward.
A rag top Defender is much easier.
You should also have some screen supports and tie downs on the bonnet to prevent damage to the bonnet and screen when you hit bumps and pot-holes etc.
You won't find me on: faceplant; Scipe; Infragam; LumpedIn; ShapCnat or Twitting. I'm just not that interesting.
Possible, yes, easy, no.
1. Remove headlining over front seats
2. Unbolt top of windscreen
3. Remove wiper arms
4. Unbolt hinges from windscreen and fold hinges down (this avoids lifting the roof)
5. Loosen hold down nuts and hing the hold down bolt
6. remove windscreen complete, easing the bottom forward first.
7. Reattach the hinges with the windscreen in the folded position, and support as Diana says.
The problem with folding the windscreen in any form of hardtop is that since the windscreen leans back, it lifts as it starts to fold. Also be aware that the absence of the windscreen will affect the body rigidity to some extent.

Shooting Hatch for Defender
Wide Opening Roof Window - Shooting Hatch
I was in a Malaysian Army 109 FC once, the hatch was over the front passenger seat, and the seat swab lifted off and had some non slip grip pads under it for standing on.
It's a bit frustrating that the Jeep Wrangler still has the ability to easily fold down the windscreen and pop the top off and we seem to have lost it, but we still have those stupid "imaginary hinge from a bygone era" covers that only seem to serve as a watering point for the front floor.
