the inner seal that separates the diff centre from swivel ball is leaking. the grey colouring is coming from the oneshot grease. i wouldn't worry about it. the oneshot has ingredients for the CV joint that include graphite (the grey). be concerned if its milkyQuote:

It should have a hose on it that heads up into the engine bay, make sure this is higher than the deepest water you play in, the rear breather is often lower than the front one.
Check the hose is not blocked or broken, the fitting in the axle housing can get blocked as well, it can be unscrewed to clean it out, there is a washer on each side of the banjo fitting, don't lose them.
The attached pic is a Disco, but my 95 Defender is the same.

I found a video of what milky diff oil looks like and it was pretty white not what I had
Now going to check the grease in my ball joints.

it will be hard to measure the one shot in the ball joint if it's a later defender. there is no overflow port like in the D1 where you can remove the plug and dip your finger into the hole to check the level. The swivel ball takes 400ml of oil to the overflow hole. The oneshot grease is pretty expensive for what it is. You can take NGLI2 CV grease and add a little gear oil to it to thin it. That is what one shot really is. Early landies ran their CVs in gear oil. I think the change to grease came from the need to mitigate the leaks from the swivel ball. If you can't check the level but have concerns, drop in 100ml of gear oil otherwise you might have to strip it down and start afresh.
