So many of us have run 255/85 for so many years it isn't funny with no ill effects.
And the standard 130 HD 6.5" rim use a 20.6mm offset, giving a 1" track increase over standard 110 rims. (255/85's seat on them ok and are legal in that size rim)
I actually used Mach V rims for a long time, 7" with 0 offset and no issues.
Tombie ran a fair bit of offset on Lara, his old TombRaider but can't recall exactly what now, and had the load calcs done and it was fine.
Bear in mind stock 32 spline CV's aren't a 110's strong suit at the best of times, drive carefully or upgrade, but you won't have a problem with stub axles or wheel bearings
I wouldn't run an 8" rim with 255's, you'll have trouble getting the bead to seat and you run the risk of getting crap caught in the bead at low pressures offroad as its more exposed.
I'd stick a 7" rim.
