I am about to place an order for a new 110 defender and looking to tow a caravan around 2 tonne. Can anyone share thier experiences with these new machines as far as long distance towing capabilities.

To address your question - although I haven't personally used my 07 Fender to tow anything - I can tell you the vehicles are torque monsters, so I can't see you having any issues.
