On my 300Tdi Defender, have a temperature sensitive switch on the cylinder head that opens at 105 degrees. The wire that goes to the fuel solenoid on the injector pump goes through it. Motor stops if temperature gets to 105 degrees -well before overheating damage occurs regardless of reason. Good idea to have a manual override - a push button that has to be held down for motor to run is simple and relatively idiot proof so motor can be run for a short time, eg to drive off the carriageway to park.
Note this protection setup is more fail safe than some. eg if wire falls off or crook connection, motor stops. With some systems, if something does not work properly it can mean no protection.
