Shouldn't be too hard, I'm assuming you are talking about getting cylinders filled ? - look for a smaller hardware (although they are getting harder to find) or a specialised camping place. If you want to buy a 3kg cylinder, anywhere like BigW/Kmart etc will be able to supply but then you will still need to get it filled.

Whereabouts in Sydney will you be ?

Around the western subs of sydney you can get 9kg bottles filled for $15.00 at bunnings (hardware) or most camping stores you can get all the adaptors and hoses you need
