I only bought mine at the recent SuperShow but I did a mild Vindaloo Chicken the other night that wasn't too bad.
Put the oven onto some hot coals and get it nice an hot, then add
enough vegetable oil to cover the bottom of the oven,
2 roughly chopped onlins,
2 cloves of garlic, sliced or smashed,
1" of green ginger root, sliced or shaved,
a good tablespoon of Vindaloo paste (more would be nice, but the kids needed to eat).
Give it a good stir until the onion starts to go clear or brown, then toss in about 1/2 kg of cubed chicken breast, make them big cubes and stir constantly till the chicken is well coated with the sautee mix.
Remove the oven from the hot coals and bring the heat down a bit before adding a tin of coconut milk/cream and putting the lid on with some coals on top.
Put a pot of water on the hot area of coals to boil for the rice at this time.
Peel some potatoes and/or sweet potato and cube to about 1cm cubes and then add them to the curry.
Add the rice to the boiling water.
Check the curry and if it is starting to dry out too much, add another tin of coconut milk or some water and a handful of raisins or sultanas.
Drain the rice and serve.
