We usually pre-marinate something for the first night - something like:
Honey & Soy, Tandori, Herb & Garlic for steaks or kebabs.

Big fan of the 'stew' types of meals too - Beef/ Lamb Goulash, Beef/Lamb Stews, Apricot Chicken (nice one Phoenix)

or the "Mish-Mosh" (as we call it):
Diced up meat (usually beef or lamb)
largely diced veges: Potato, Onion, carrot, etc (beans, peas later on in the cooking)
Can of Peeled/ chopped tomatos
1/2 cup of red wine...salt, pepper, herbs bla bla
bring it to the boil and then simmer it down to a thick stewy kinda thing!

You get the drift - a mish mosh - but i must say, it always tastes fantastic!!
(if you need more moisture in it - add more wine)

Dessert:
Banana's split in half, crush/chop up some 'Toblerone' bars into the middle of them, wrap them in foil, and on they go - a truely yummy - sloppy. banana chocolate treat for all!!

Without doubt, beef in red wine stew. Put a sizable amount of good steak cut up into chunks in the bottome of a camp oven and brown it. Stir though a bit of corn flour. Throw in some onions, potatoes carrots and peas (or whatever else you've got). Tip in a bottle of red wine (make sure that it is a drinkable red). Put the lid on and let it simmer for an hour and a half. Eat with some crusty bread.

Magnificent.
