applies to anything stainless that has movement.

the less movement or vibration in stainless the less it work hardens and the less it cracks. stainless contains chromium, it hates vibraton, being welded to hot and cooling very slowly or too quickly...

dont know the exact figures but low grade stainless is about 20x times more prone to cracking than mild steel in the same environment.

a well baffled tank will last a hell of a lot longer than one that has heaps of movement as it will crack beside where it moves.

it is also a very dirty metal and attracts bacteria in way greater numbers than just about anything else :P

but it looks pretty and is easy to clean in a commercial environment.

Yep.

Apparenlty you can't use the "green" metal ones for water (well that's what the labels say ), so if you wanted to carry water in a metal can I guess these would be worth considering - but they would need to be half that price.

I wouldn't use them for water, in fact I've replaced my steel ones for plastic now, gentler on the paintwork of the camper.
I can't see the worth of the stainless steel ones, 2 of my steel ones are over 40 years old!
