Ok, as a kid we got to do the following while camping....

Fish, walks, bike rides, motorbike rides, Horse rides, climb the biggest tree in the area, Shoot fish, Shoot critters, kill anything that moved.

    Or the best one was......

Colouring books, walkman(walkmen?), take a bird book so they can identify any birds they see.

Wet weather is another pain as they need something to do in the tent. We got ours their own tent as we need a break from them sometimes.

If they play around the fire watch them, I was a friend's boy's ski gloves catch fire while toasting marshmallows. He got the fright of his life when seven adults leapt on him to put them out.

Set up a "observation trail" on one of the walking tracks, i.e. weird knot on tree, etc then take kids on walk, they have listing of what to look for, turn it into a bit of a navex. That way they learn observation, as they are looking for the things on the list and get to see more than what they would do if just went on a bush walk. They can add things too....like "JOE BLAKE!!!!!! 6 o'clock"

Several years ago I got a copy of "quicksilver" by Karl Rohnke (a follow up to "silver bullets"), there are other books too, plenty of good activities that require minimal props in there. Also plenty of "ice breakers" if you have a group of kids (or adults) that don't know each other that well.
