This recipe is also fantastic on chicken thigh fillets, lamb chops or shanks, it also allows meat to be kept longer without refridgeration, as I found out.......It is also perfect for cryovaccing!....which I now do with chicken when we go bush, a definite favourite amongst many friends it is known as 'Gerry's chook', and I'm aways pestered to bring 'heaps'....truthfully, I dont mind...........It's also a real easy recipe to prepare while bush, ingredients do not go off, you don't even need a plate, so no washing up!!
    I know this thread is a smidge old....but am looking to cook rabbit on a spit on the weekend. Rough time to cook over the coals? Really looking forward to it as havent eaten rabbit since I was a youngin,

    Bunny in paper

    Joint rabbit as you will.
    Wrap rabbit, onions, bacon, bit of butter, garlic etc in brown paper. (about 3 layers)
    Dunk in water till very wet.
    Wrap this in newspaper (about 3 layers) and dunk this in water till very wet.
    When you have about 12 layers of very wet newspaper round one bunny, place the wet parcel on the coals of a good fire.
    Cover the parcel with coals and ash, don't want too many flames.
    Some of the outer layers will burn away, but not to worry.
    Should take about 2 hours and the bunny and veggies will be cooked.

    Probably too late now, but rabbit is very lean, so you need to make sure it doesn't get too dry. Either wrap it in bacon (held with toothpicks or similar) or baste regularly with a marinade (i usually use red wine, olive oil, garlic and herbs).

    1.5 hrs on a spit over the coals should do.

    Hey mate....yep too late for the bunny cooked....but not to late for the next one I will do . The one we cooked was a little dry....nice...but dry....will note your suggestions for next time,
