To hold stuff together (like using another pair of hands) I use a variety of different size plastic spring clamps. They're black with orange grip pads, look like welding clamps and cost jack from $2 shops. Get them in packets of 10 usually.
You just clamp 2 pieces together using some backing which can be flat, curved or angled and do whatever you have to.
I use marine ply instead of MDF for door cards and stuff like that. MDF absorbs moisture from the air and gradually distorts and expands. I figure if I'm going to the trouble of fabbing something to look good and function well in an interior it may as well keep doing it for a looong time. Because the size of pieces that get used in an interior is quite small the extra cost is not that great.
