Without seeing the unit removed from the dash I would say you have a number of options.
First and easiest...use one of the cassette tape ----- i Pod headphone out adaptors.
Second.... Does the head set have a pair of line-in jacks? You can use these via a RCA leads...again from the headphones output jack on the I-Pod.
Another option is to get one the relatively cheap radio freq transmitters that send the music to the head set via the FM radio. I've had variable results with these depending on the type of car/i-pod/head set combination.
Failing these...it's time to up-grade the head set to find an i-pod compliant unit from SONY, Alpine etc that use USB or Blue Tooth conectivity.
