Open Contacts > Customize Current View > Sort
Then change the first option to FIRST NAME, second option to LAST NAME and third option to COMPANY
Hit OK then YES and OK again.
Your contacts should then sort themselves out in the order you picked.

I have 868 contacts in Outlook 2007, all with the "File as" field set at company (last name, first name). I want to change them all to first last name.
Question is: Can I do this globally or do I have to do them individually?

I want to change the format of the file as field in each contact, not just sort contacts.

Haven't got outlook infront of me, but I suspect you can export the contacts to a .txt file, move things around in Excel, and import them back again.
Backup the .pst file before you do anything though. That way if it goes pear shaped you can get yourself out of trouble.

edit: I think the 'file as' option gets its info from the two names (i.e. a calculated field), and you should have an option of how this is displayed, and should be easily changed as a user preference
