looking for a V8 God in SA
as it said, who or where is the best place to go?

What's a V8 god do? I can point you at a guy (also aulro member) who has a spare 3.9 V8 engine in his shed for sale.

Is it save to assume that its a mechanic that knows what they are doing.
I think I know the same bloke as Bee-utey who has the V8 in his shed.
Its a good motor thats been part of a Land rover mechanics own car for a long time.
Anyhow, not all mechanics want to work on these motors because they don't actually produce much power if you spend big dollars on them.
Try Bristish spares just off North east road.
He does plenty of work on my car and is well priced.
There is also PCB Land Rover in Plympton, very good reputation once again.
As far as god is concerned, get your self some good tools, do some research and how to guides and if you have room, do it your self.
Although I don't have time to do the work these days, I used to do it all myself.
They are dead simple motors, just take your time, used the right gaskets and new bolts and get a good torque wrench.
Could that be the V8 God you are looking for?

Sovereign in Angas St or Brenton at British 4x4 in Windsor Gardens are competent though I wouldn't really call them V8 specialists. Rhemac at Gawler have built a few to high specs, proper machine shop, professional engine builders.
You can research and develop a speci then source all the parts you need to build a good motor yourself easily enough (from Oz,UK or US). There's an enormous range of parts for these engines going back 40 years and lots of knowledge on the RV8/Buick forums.
