first thing to do is fit an "engine monitor" (i have a watch dog brand) this can be found here or on ebay.
it measures the heat in the head from being bolted to the actual head itself and can warn of rapid loss of water LONG before the temp gauge has even thought about moving and can save you big $$$$$$$$
