Thermostat may be stuck shut if you aren't losing any coolant. That's what I'd check 1st.

After a weekend away in the mud on way home I started over heating (maybe it's my vehicle complaining about being removed from it's natural habitat)
Finally got home blasted any mud and debris blocking air flow through radiator and found a cracked hose which was repaired, thinking I had fixed my over heating issue I went of to find a new indicator and this morning still happening.
Normally temp gauge sits just under half way and won't go higher however now it is regularly sitting up near the white line at top of gauge. Haven't had any warning lights come on even when needle gotta right up to red (I thought that top left light that comes on when ignition switches on would light up if running hot)
At times I found it was so hot when switching off engine could hear the water boil in tank.
Currently I'm thinking maybe thermostat has died but am open to suggestions from more experienced personal

Which engine, TDI or V8 ? TDI i would hope for the best and prepare for the worst, V8 is not much better with possible liner problems.
I would start with thermostat then hoses then radiator and go from there, not knowing the previous history i would be replacing all the coolant hoses and thermostat anyway with some fresh coolant.

It's the 300tdi 95 model will be looking into thermostat later when I get homeand it cools down about doesn't seem to be losing fluid

Firstly I would stop driving it anywhere. Unfortunately, regardless of reason for overheating, the overheating will be causing much worse problems (head gasket or worse).
If the thermostat is stuck closed, then the radiator should still be relatively cold when it overheats.
Viscous fan. If it is happening driving around town in this weather, I tend to think it's not going to be viscous fan, but worth checking.
Otherwise you're possibly looking at head gasket. Stand at the engine bay with the expansion tank cap off and try revving the engine. Do you see air bubbles appearing?
Tried with expansion tank cap off and it just ends up spewing everything out of the top of it.
Viscous fan? Im guessing the 2 thermo type fans on the front of radiator. Maybe get a better explanation on this. If it is that your talking about they do start up at some point not sure when think I have to be quite warm for it to happen.
Viscous = engine driven fan, even if its now working correctly you shouldnt overheat in this climate although slow moving offroad will raise the temp quickly.
You could remove the thermostat and then see if it still spews coolant, if it does then i would bet its a head gasket or worse.

Well I have just removed the thermostat but engine is still feeling a little warm so am going to let it sit the night and then try again with the expansion tank lid off and see what happens. results will be posted tomorrow.
Though I did discover before removing the thermostat the top pipe from radiator to engine (not the one from radiator to thermostat housing) didn't get warm and supple as if no fluids had been flowing through it did however once thermostat was removed it did suggesting to me that the thermostat wasn't opening properly.
Also how full should that expansion tank be when engine is cold as my guess is I may need to add some more fluids since currently alot of it is sitting on the ground beneath the car.
