If I were to install these: Best Mufflers the Muffler and Exhaust Specialists
What would become of the oxygen sensors that are currently bolted into the cats?
Would the wiring need to be extended out to two aftermarket cats that bolt on between the headers and Y pipe?

The gains arent worth it.
Unless you are doing it to get rid of the standard exhaust manifolds and their unreliable junctions with the Y pipe and the puny studs.
This is the reason why I'm considering going to headers as I'm sick of exhaust leaks.
If you go to headers you will need to weld fittings for the O2 sensors and install cats. The O2 sensors are before the cats not in them.

and is it possible to get good sound through cats?

Cut the sensor mounts off the old exhaust and weld them to the extractors. There is a bit of slack with the cables when you unclip them at the connector plug brackets.
I'm positive that the $$'s spent in this conversion won't equal any major performance benefits.
I've done a bit of research on fitting extractors to the 4.0 and can't see any reason to do it unless you're looking for loud noises, or....
My theory lies purely in having a better designed and better functioning set of headers compared to the OEM manifolds.
I spoke to performance exhausts in ringwood and they said there's holes in the extractors for the O2 sensors already.
It's an expensive option to go down this track, so I'll stick with stock until it stuffs up again and then re-evaluate.
